Who doesn’t love creamy comfort food? Anyone who is trying to slim down and eat healthy! This creamy mashed cauliflower recipe can be made savoury or sweet and is better than mashed potatoes because you can eat twice as much without the high starchy carb count!

Savoury Ingredients

2.5 – 3 lbs (medium) cauliflower head (chopped)

2 large garlic cloves

1 tbsp coconut oil,

Salt, Ground black pepper, to taste

Sweet Ingredients

2.5 – 3 lbs (medium) cauliflower head (chopped)

Coconut oil spray

Sweet and Spicy Oh My Spice Seasoning

2 tbsp unsweetened cashew milk

Squeeze of Coconut flavoured Stevia (now brand)

Salt to taste

Unsweetened toasted coconut chips for garnish

Savoury Prep Talk

1. Separate cauliflower into florets and cut in smaller chunks. In a medium pot, combine cauliflower, garlic and enough cold water to cover the vegetables. Cover with a lid and bring to a boil. Reduce heat to low and cook for about 10 minutes or until cauliflower is fork tender. Drain.

2. Add coconut oil, salt and ground black pepper to taste. Using immersion blender (food processor), process until very smooth or desired consistency. Adjust salt and pepper to taste, if necessary.

OR

Sweet Prep Talk

1. Toss chopped cauliflower on baking sheet and spray with coconut oil and Oh my Spice mix.

2. Bake for 30-45 minutes at 350 degrees.

3. Remove from oven, add dash of salt and blend in Vitamix with splash of stevia sweetened Cashew milk to desired consistency.

4. Serve and garnish with toasted coconut chips.

Serve hot just like you would serve mashed potatoes.

Refrigerate in a glass airtight container for up to 3-4 days
