Spicy Pumpkin Seeds

 INGREDIENTS

1 1/2 cups pumpkin seeds   2 teaspoons Coconut oil   Sea salt, to taste   4 tablespoons of assorted spices such as cayenne pepper, cumin, rosemary, thyme or Moroccan seasoning

Prep Talk:

Preheat oven to 350° F.   Pull seeds from inside the pumpkin. Remove pulp or strings from the seeds and rinse. Blot seeds dry.Toss pumpkin seeds in a bowl with coconut oil, salt and seasonings.   Spread pumpkin seeds in single layer on baking sheet. Bake for 30-40 minutes, stirring occasionally, until golden brown and crispy.

 

Sweet Pumpkin Seeds

INGREDIENTS

1 1/2 cups pumpkin seeds   1 1/2 tablespoons melted coconut butter / or regular butter   2 tablespoons Truvia or Xylitol   4 teaspoons cinnamon   1/2 teaspoon nutmeg   1/4 tsp  sea salt

Prep Talk:

Preheat oven to 350° F.   Pull seeds from inside the pumpkin. Remove pulp or strings from the seeds and rinse. Blot seeds dry.   Toss pumpkin seeds in a bowl with your choice of melted butter and remaining ingredients.   Spread pumpkin seeds in single layer on baking sheet. Bake for 30-40 minutes, stirring occasionally, until golden brown.
